Your spring rolls look wonderful.. They are spring rolls, right? Everything looks wonderful…

Thank you so much, Faye! We love these rolls and found that some restaurants call them spring rolls and some call them summer rolls. Where we live outside Philadelphia, they are called summer rolls and the difference is that the spring rolls here are smaller and fried. 🙂

And, Faye, just after I replied to you, I looked at my the wrapper package for the summer rolls and it said they were for spring rolls! lol

Thanks, Heather! It’s a salmon and yam salad with cashew cream dressing. It was amazing. Here’s the recipe. (I used canned wild Alaskan salmon, rather than smoked because I couldn’t find any wild Alaskan, which is what I prefer to buy.) http://www.nourishingmeals.com/2014/04/smoked-salmon-and-yam-salad-with-creamy.html

Rice paper rolls are one of my favourite things! They look delicious 🙂

Thank you! We love them, too. I made them again today, but they are time consuming!

Acai powder – for your smoothies?
jenniferkidoing said:
Hey Corry! For smoothies or for juice. In this pic, I was making an acai beet juice. You juice everything, then put it in the blender with the acai powder, blend then let it sit for a minute. It was a really unique blend.

You make the most wonderful looking salads (quinoa here, yes?). And that cake looks delicious–and your photo captures it artistically. Thanks for the peek in!

Erin – thank you for the kind words! Yes, there is quinoa in the middle salad. I love to make variations of that throughout the spring and summer. 🙂
